湖北省食源性致病菌污染状况调查分析 被引量:34

摘要 目的了解湖北省食品中食源性致病菌的污染状况及其趋势。方法从2000年开始对湖北省食品中食源性致病菌进行了监测。在9个监测点采集8类共2 488份食品样品,按常规方法分离鉴定沙门氏菌,O 157∶H 7,单增李斯特氏菌、弯曲菌、副溶血性弧菌。结果5种食源性致病菌在湖北9个地区都有污染存在,以沙门氏菌污染率最高(5.8%)。其次是单增李斯特氏菌(3.5%)。在监测的8类食品中,以生肉类食品污染率最高(20.3%),而这类食品中又以生鸡肉污染最为突出(28.%)。结论湖北省食品中食源性致病菌污染趋势有明显上升,应引起有关部门的重视。 Objective Surveillance was conducted in Hubei province since 2000. Methods To find out food contamination by pathogenic bacterium and its trend in our province. 2 488 food ( 8 categories) samples were taken in 9 surveillance spots. Routine method was used to isolate and identify Salmonella, E. coil O157, Listeria, Camplobacter, and Vibrio parahaemolyticus. Results The 6-year investigation showed that there were food contamination by all the five pathogenic bacteria, among them, Salmonella contamination was the highest (5.8%), followed by Listeria (3. 8%). Of the eight types of food, the heaviest contamination was caused by uncooked meat (20.3%), especially uncooked chicken (28.0%). Conclusion The 6-year surveillance suggests that food contamination by pathogenic bacteria in Hubei is significantly increasing and calls for more attention by concerned departments.
