摘要
提出了一种酶催化合成蔗糖-6-月桂酸单酯的新方法:在两种有机溶剂混合组成的媒介中,蔗糖与月桂酸乙烯酯在脂肪酶的选择性催化下通过酯交换反应定向合成蔗糖-6-月桂酸单酯。通过改变溶剂的种类、酶的来源、酶的浓度及反应物料摩尔比等因素进行优化反应。最佳的反应条件为:叔戊醇/DM SO=4/1(V/V)的混合体系,100 g/LL ipozym e TL IM,40℃下反应6小时,转化率为97.2%.
A new method of synthesis of 6-O-lauroylsucrose selectively catalyzed by lipase was presented in this paper. The enzymatic synthesis of 6-O-lauroylsucrose was performed by transesterification of sucrose with vinyl laurate in a medium constituted by two solvents. The influence of the solvents, the lipases, the concentrations of lipases and the molar ratio sucrose/vinyl laurate were investigated and optimized. The optimum of reaction conditions were established as follow: at 40℃, 2-methyl-2-butanol/DMSO = 4.1 (V/V), in the presence of 100g/L of lipase (Lipozyme TL IM) as, 6-O-lauroylsucrose yield reached 97.2% after 6hr of reaction.
