鱼类食品中组胺的简易检测法 被引量:3

摘要 组胺又名组织胺,分子式C_5H_9N_3,是食品蛋白质中游离组氨酸在组氨酸脱羧酶催化下发生脱羧反应而形成的一种胺类。随着人们生活水平的提高和对食品营养的重视,鱼类等水产品越来越成了人们餐桌上的佳品。然而某些鱼类保存不当被细菌污染后,则产生组胺及其它有毒物质,食后会给人们带来一定的危害。
