This paper presents the basic methods in the fruit and vegetable peeling,and introduces the structure of the peeler and the essential points in designing' According to the characteristics of several fruit and vegetable materials, it is emphasized to introduce the application of mechanical peeling in the fruit and vegetable juice processing.
