摘要
综述了近几年来,国内外脱水蔬菜的工艺、脱水原理、脱水蔬菜的理化性质、冻干产品的检验指标及目前脱水蔬菜存在的问题,同时,对未来的脱水蔬菜发展趋势及我国的脱水蔬菜的前景进行了展望。
The paper summarizes dehydration mechanism, dehydration technology, physico -chemical characteristics of dehydrated vegetable products, quality indexes and existing problems to freezedried products. In the meantime,developmental trend and the future of dehydrated vegetables in China are forecasted.
