不同品种鸡蛋中胆固醇含量的比较研究 被引量:22

摘要 随机选取32~36周龄罗曼褐鸡、闽中麻鸡、淮南鸡三种健康鸡的新鲜鸡蛋各30枚,测定不同品种鸡蛋中胆固醇的含量及其常规营养成分,比较研究品种对胆固醇含量的影响。试验结果表明,不同品种鸡蛋中胆固醇含量差异显著,其中每克蛋黄胆固醇含量以淮南鸡最高,为16.32 mg,比罗曼褐鸡高24.20% (P<0.05),比闽中麻鸡高3.95%(P>0.05);每枚鸡蛋胆回醇含量以闽中麻鸡最高,为241.31g,比罗曼褐鸡高9.18%(P<0.05),比淮南鸡高5.99%(P>0.05)。不同品种对鸡蛋中其他常规营养成分的影响不明显。 30 normal eggs from each of the three breed layers, which included Roman brown commercial layer (RBL), Huainan layer (HNL), Minzhongma layer (MZML), were selected to compare the differences of cholesterol content of the eggs. The results indicated that the cholesterol content from different breeds were notably different. As to the cholesterol content per gram in the yolk, HNL (16.32mg) was biggest, 24. 20%(P〈0. 05) higher than RBL and 3. 95%(P:〉0. 05) higher thanMZML. About the cholesterol content per egg yolk, MZML(241.31mg) was the biggest, 9.18%(P〈0.05) higher than RBI. and 5, 99%(P〉0.05) higher than HNL. There was not remarked difference of the other normal nourishment composition among the three kinds of eggs.
