摘要
本文介绍了近年来大豆皂甙研究现状，如大豆中皂甙的存在部位，皂甙的主要类型，大豆皂甙对动物体内物质代谢的调节作用，大豆皂甙含量测定及在大豆种子发育、萌发过程中的含量变化等。展望了开发利用大豆皂甙的前景。
In this paper, the advances of research on soyaspenins are introduce.The content of soyasaponins in hypocotyl is higher than in cotyledon. The main kinds are soyasponin A1、A2、Ⅰ、Ⅱ、Ⅲ and acety1-soyasaponin Al、acetyl-Soyasaponin A4. The saponins have some significant physiological activities(e.g.antioxidative. hapolipidemic. hypocholesterolemic properties, etc. )Based on rich researches,we look forward to the future of developemnt and utilization of soyasaponins.
