摘要
山梨醇是一种存在于许多水果中的多羟基化合物,它作为甜味剂、保湿剂、软化剂被广泛用于食品工业、化妆品、药品的生产。综述了利用运动发酵单胞菌(Zymomonas mibilis)发酵生产山梨醇的研究进展,讨论了利用运动发酵单胞菌工业化生产山梨醇的可能性,并将它与化学法生产山梨醇以及利用其他微生物生产山梨醇的方法作了比较。
Sorbitol, a polyol found in many fruits, is widely used as sweetener, humectant and softener in the production of food, cosmetic and medicament. The production of sorbitol by Z. mobilis was reviewed. The possibilities for the industrial production of sorbitol by Z. mobilis were discussed, and compared with the current chemical production method as well as other microbiological processes.
