可口革囊星虫的营养成分分析与评价 被引量:29

ANALYSIS AND EVALUATION OF THE NUTRITIVE COMPOSITION OF CLAM IN PHASCOLOSOMA ESCULENTA

摘要 测定了可口革囊星虫的营养成分,干物质中蛋白质、脂肪、总糖和灰分的含量分别为70.68%,2.29%,5.51%和15.32%。必需氨基酸占氨基酸总量的35.41%,氨基酸分为32,化学分为19分。脂肪酸中不饱和脂肪酸(UFA)含量为81.22%,高于饱和脂肪酸(SFA);不饱和脂肪酸中高度不饱和脂肪酸(HUFA)的含量为54.27%;脂肪酸中EPA和DHA的含量为3.9%和0.12%。无机元素丰富,其中常量元素含量规律为Na>K>Mg>P>Ca,微量元素中Fe含量较高,其次为Mn和Zn。 The nutritional componets of Phascolosoraa esculenta were analyzed. The con tents (DW) are as follow: protein 70.68%, fat 2.29%, glycogen 5.51% and ash 5.23%. Essential amino acids took up 35.41% of the total amino acids, the score of amino acids was 32 and the score of chemicals was 19. The analysis of the compositions of fatty acids showed that it had 27 kinds of fatty acids. The UFA content was 81.22% in the fatty acids which was higher than that of SFA. The content of the HUFA in the UFA was 54. 27%. The contents of the EPA and DHA in the fatty acids were 3.9% and 0. 12%, respectively. It was rich in vitamins, the contents being in the order Na〉K2〉Mg〉P〉Ca, as for the trace elements, the order was Fe〉Mn〉Zn.
