反丁烯二酸糠醇甲酯对酵母和霉菌的抑制作用研究 被引量:9

摘要 本研究合成了一种具有α,β-不饱和羰基结构的化学防腐剂--反丁烯二酸糠醇甲酯,并对其抗酵母和霉菌的效果进行研究,结果表明,其对酵母和霉菌均具有较强的抑制作用,生长曲线测定表明它可以有效延迟啤酒酵母和黑曲霉的生长,显著降低它们的最终生长量,而且效果明显优于常用防腐剂苯甲酸钠,是一种具有广泛开发前景的防腐剂。 In this article a new asymmetrical ester, methyl-furfuryl fumarate, containing α, β -unsaturated carbonyl group structure were prepared, and its inhibition on yeasts and mold were studied. The results showed that it could remarkably inhibit the growth of yeasts and mold. And it could effectively postpone the growth time of Saccharomyces Cerevisiae and Aspergillus Niger and reduce their final Furthermore its effect was much better than sodium benzoate. These suggested it was a worth of developing and applying largely. growth quantity. new preservative
