摘要
利用诱变选育出的黑曲霉C_93菌株制备棉粕成曲酿造酱油,不但能有效地脱除棉粕中的游离棉酚,还能大幅度提高成曲的酸性蛋白酶活力,产品质量符合国家标准。对微生物脱除棉酚机理进行了探讨。
The paper researches on the brewing processes using cottonseed-meal koji which is produced with A. niger C93 strain that could eliminate free gossypols in cottonseed -meal,and has higher activity of acid protease. The quality of product accords with GB 2717-81. The paper also probes into the mechanism of eliminating gossypols with A. niger C93straln.
