摘要
采用凯氏定氮法和光谱法分析测定完达山奶粉系列中蛋白质的含量.对传统的凯氏定氮法的催化剂进行了改进,加快了消化速度,缩短了分析时间.光谱分析方法的回收率为94.22%~101.00%,变异系数为0.44%.对非高脂肪含量奶粉,光谱法和凯氏定氮法的测定结果无显著性差异(P〉0.05).
Kieldahl method and Speetrophotometry method are improved for the determination of protein in Wandashan milk powders. Through changing the catalyst of the tradition Kieldahl method,the speed is quickened and the reaction time is shortened. For the Spectrophotometry method, the recovery is 94.22% - 101.00% and the coefficient of variation is 0.44%. For the powders of lower fat, the two methods have no notability difference (P 〉 0. 05 ).
