摘要
利用正交试验对番茄红素的提取工艺进行了优化。并且对以大豆蛋白和蔗糖作为壁材,喷雾干燥制备番茄红素微胶囊的工艺进行了探讨。试验结果表明:用CHCl_3提取番茄红素的最佳工艺条件:萃取时间为2h,pH=6.0;温度为25℃;溶剂量为30%,制备微胶囊产品的工艺条件为:壁材采用大豆蛋白和蔗糖(比例为4:6);芯材量为40%;采用复合乳化剂(蔗糖酯和单甘酯),HLB值为13,用量为2%;均质压力为40MPa;喷雾干燥进风温度200℃,出风温度90℃。制备得到的微胶囊产品,效率可达90%以上。
In this paper, the extracting conditions of lycopene was investigated by the orthogonal design. And technique of microencapsulation in a wall material system consisting of SPI and sucrose by spray drying, were outlined. By orthogonal test, the optimum extracting conditions was adding 30% of CHCl3, extracting 2.0h at 50℃ pH 6.0. Experiment results showed that the optimum conditions of microencapsulation were a wall material system consisting of SPI and sucrose (4 : 6), the content of core materials 40%, and sucrose octaacetate-monoglycerides as emulsitiers, HLB value 13, the content of emulsifier 2%, homogenizing pressure 40MPa, and the inlet temperature and outlet temperatures were 200℃ and 90 respectively. Retention ratio was above 90%.
