几种蛋白酶对鮟鱇鱼骨中生物活性钙富集的比较分析 被引量:2

摘要 实验采用选取中性蛋白酶、木瓜蛋白酶和胰蛋白酶作用于鮟鱇鱼骨,研究了富集鮟鱇鱼骨中生物活性钙的最佳工艺条件。研究表明中性蛋白酶、木瓜蛋白酶和胰蛋白酶具有较好的富钙效果,而胃蛋白酶的富钙的效果较差。三种酶的最好作用时间为6h~8h;木瓜蛋白酶的作用的pH为7.0,温度为45℃,浓度为1500IU/g原料;中性蛋白酶的较好作用pH为7.0,温度为50℃,浓度为2500IU/g原料;胰蛋白酶的较好作用pH为8.0,温度为45℃,浓度为2000IU/g原料。 The optimal technology conditions were studied to enrich biological active calcium from goosefish bone by neutral protease, papain, pancreatic and pepsin enzyme. The experiments results showed that neutral protease, papain and pancreatic had strong ability to congregate calcium, while pepsin was poor. It is 6-8 hours for the three enzymes, but at pH7.0, 45 temperatures and 1500 IU/g concentration for papain; and at pH7.0, 50 temperatures and 2500 IU/g concentration for neutral proteins; and at pH8.0, 45 temperatures and 2000 IU/g concentration for trypsin.
