摘要
对黄鳍金枪鱼背部肌肉的营养成分进行了分析,并对其蛋白质营养价值进行了评价。结果显示,金枪鱼背部肌肉粗蛋白含量为26.2%,脂肪含量仅0.2%,是高蛋白、低脂肪的健康食品;根据1973年FAO/WHO推荐的必需氨基酸需要量模式(成人模式)对金枪鱼背部肌肉蛋白进行评价,氨基酸分为101,背部肌肉中呈味氨基酸占氨基酸总量的41.31%且含有丰富的矿物元素,金枪鱼背部肌肉是营养丰富、味道鲜美的优质原料。
The nutrient components of yellow fin tuna's back muscle were analyzed and its protein nutritive value was estimated. The results show that the content of crude protein of tuna's back muscle is 26. 2%, the content of fat is only 0. 2%. It is the healthy food of high protein, low fat. The amino acid score of protein of tuna's back muscle was 101 by essential amino acid requirement mode (adult mode) that FAO/WHO recommends in 1973. The flavor amino acids account for 41.31% of the total amount of amino acids in the back muscle and there are abundant minerals in the muscle. Therefore, tuna's back muscle is a nutritious hlgh-quality raw material with delicious taste.
