摘要 用有机溶剂从预处理的番茄原料中提取出番茄红素油树脂,并采用皂化法与重结晶法结合来纯化粗提物得到番茄红素晶体。研究了纯化过程中皂化比例、皂化温度、皂化时间对产量和提取率的影响,通过紫外可见吸收光谱、红外光谱、光学显微镜、扫描电镜、X-射线衍射仪对晶体进行表征。结果表明番茄红素晶体为片状,其尺寸大约为10~20μm,结晶状态良好。 Lycopene oleoresin was extracted from pretreated raw tomatoes material, and then were purified by using saponification "and recrystallization method to form lycopene crystals. The effects of saponification ratio, saponification temperature, saponification time on extraction yield were studied. Lycopene crystals were characterized, by ultraviolet spectrum, infrared spectrum (IR), optical microscope, the field electric scanning electronic microscope (FESEM) and X-ray diffraction (XRD). The results showed that lycopene crystals were fine flake shape of 10-20 μm.
