高蛋白质面粉提取技术的研究

摘要 首先对高蛋白质面粉提取设备-面粉气流分级机的结构和工作原理做了简要的介绍。使用中试实验设备,分析了不同转速和风量下面粉分级提取的效果,并在生产中进行了现场生产技术指标的测定。结果表明,气流分级技术能够有效地解决面粉生产中高蛋白质面粉的提取问题,为高筋粉的生产提供了一条有效的途经。 The present paper focuses on the application of a flour classifier in Flour Mills. The classifier's performance in the extraction of high protein flour under several operational conditions was investigated. The results showed that the extraction of high protein flour by airflow classifier is positively proportional to the flux of airflow and is inversely proportional to the rotation speed of the impeller of airflow classifier. In contrast to it, the protein content in high protein flour is inversely proportional to the flux of airflow and is positively proportional to the rotation speed of the impeller. Data obtained in the study may serve as the guidance for extraction of high protein flour in Flour Mills.
