摘要
实验研究了应用双歧杆菌发酵梨汁,结果表明:分离到的双歧杆菌加入梨汁中37℃发酵16~18h,活菌数增到10~9cfu·mL^(-1),发酵梨汁在4~5℃下保存5~7d后,活菌仍保持10~7cfu·mL^(-1)以上,并趋于稳定,可制成新型的保健饮料。
This experiment proved that pear juice can be fermented by B.infantis at 37℃ and the viable cell counts of B. infantis can be reached the level of 109cfu.mL-1; The viable cell counts of B. infantis would be no less than 107cfu.mL-1 after the fermented pear juice stored at 4~5℃ for 5~7days, and tend to stableness.A new type of healthprotecting bever-age will be made.
