摘要
目的:制备一种脂溶性的EGCG衍生物。方法:通过酰化反应得到EGCG肉豆蔻酸酯,利用高速逆流色谱对反应产物进行分离和纯化,并进行了元素分析、MS和1H-NMR等表征,同时用活性氧法(AOM)考察了其在大豆色拉油中的抗氧化活性。结果:该脂溶性的EGCG衍生物为长碳链单取代的儿茶素——表没食子儿茶素-3-O-没食子酸-4'-肉豆蔻酸酯,在大豆色拉油中的抗氧化活性与叔丁基对苯二酚(TBHQ)相当。结论:脂溶性的EGCG衍生物仍保持其固有的抗氧化活性,可以在非水体系中发挥其独特的作用。
Objective: To prepare A lipid-soluble EGCG derivative. Methods: A singlesubstitution long-chain acy1-derivative was prepared by esterification of EGCG with myristoyl chloride and purified by high-speed counter current chromatography(HSCCC).Its molecular structure was elucidated as epigallocatechin-3-0-gallate-4'-myristate by elemental analysis, MS and 1H-NMR.The antioxidant activity of the lipld-soluble epigallocatechin-3-0-gallate-4'- myristate in soybean salad oil were investigated and compared in AOM test. Results: The results demonstrated that the antioxidant activity of the single-substitution EGCG myristate was almost corresponding to TBHQ. Conclusion: The Lipid-soluble EGCG derivative retains its inherent antioxidant properties in nonaqueous systen.
