摘要
烹饪技能的教学应着重于经验的积累和实践的训练,掌握烹饪技能学习的认知过程和烹饪技能的教学规律是实现烹饪教学目的的先决条件。烹饪技能学习的认知过程包括认识阶段、动作连贯阶段、熟练阶段三个阶段。必须掌握烹饪技能的教学规律,即认知规律、保持规律、迁移规律、个人条件规律和外部务件规律。
Emphasis should be put on experience accumulation and practical training while cooking skills are taught. The prerequisite condition for the realization of teaching goals is to understand the cognition process for the study of cooking skills and grasp the regular patterns of cooking skill teaching. The cognition process is divided into three stages: preliminary cognition stage, coherent movement stage and proficient skill stage. The regular patterns of cooking skill teaching include cognition rule, maintenance rule, migration rule, individual condition rule and external condition rule.
