南阳彩色小麦中维生素含量的研究初报 被引量:15

摘要 了解南阳彩色小麦中维生素含量水平,为彩麦在食品上的加工应用提供参考依据。以南阳灰麦、蓝麦、硬质紫麦(大紫麦)、小紫麦为材料与兰优906普通小麦相对照,用国家颁布的标准方法对上述品种的维生素A、E、B1、B2、C含量进行测定。结果发现:南阳彩麦中维生素A的含量为0.618~2.067μg/100g,维生素E为1.14~1.88mg/100g,维生素Bl为0.276~0、342mg/100g,维生素岛为0.161~0.202mg/100g,维生素c为0.289~0.846mg/100g(灰麦未检出),表明南阳彩麦中维生素含量总体上比兰优906普通小麦高。综合其营养价值,南阳彩色小麦在产品开发和利用上有较广阔的前景。 Understanding the level of vitamin contents in Nanyang color wheat offers reference to the process of color wheat. Compared with ordinary wheat,gray wheat, blue wheat, heavy purple wheat and little purple wheat were used for the rmterial. The vitamin A, E, Bi, B2 and C in varieties mentioned above were determined by national standard. The experimental result showed that vitamin A content (unit mg/100 g) in Nanyang color wheat was between 0.618× 10^-3 and 2.067 ×10^-3, vitamin E content was between 1.14 and 1.88, vitamin Bl content was between 0.276 and 0.342, vitamin B2 content was between 0.161 and 0.2(12 and vitamin C content was between 0.289 and 0.846 (gray wheat was not detected). The results indicated that vitamin contents in Nanyang color wheat were generally higher than ordinary wheat. In consideration of its nutritive value, Nanyang color wheat has wider prospects in the produet exploitation.
