本文综合论述了EPA和DHA这两种长链不饱和脂肪酸的结构特点和代谢规律,比较详细的介绍了它们对人体健康的营养功能和机理,并对其相关产品的食用安全性和现存问题做了客观、全面的分析。
This paper describes the structure characteristic and the metabolize rule of the two polyunsaturated fatty acids, and describes their nourishment function and mechanism for the human health. At the same times, this paper analyses the edible security and existing problems of the correlation products.
