摘要
膳食纤维(dietaryfibre,DF)对人体健康起着至关重要的作用,应用到食品既发挥其保健功能又能提高食品的品质,将有着广泛的开发前景。本文分别就DF的物化及生理特性、副作用、在食品中的应用现状等方面做了综述。
Dietary fibre （DF） plays a very important effect for human health. There will be a wide exploitation prospect for its healthy function and improving food quality if it was used as a food additive. In this paper, the physical, chemical and physiological properties, its side effects on body, and the applying situation in food industry of dietary fibre were reviewed, respectively.
