摘要
从肌肉的组织结构出发,用组织学、化学与肉质测定方法,系统测定了宁夏5个主要猪品种的背最长肌肌内的脂肪含量、羟脯氨酸含量、肌肉的剪切力、肌纤维直径、肌束内肌纤维根数、肌纤维密度、肌纤维间距和肌大束间距.结果表明,梅山猪、宁夏黑猪和杜洛克猪肌内脂肪含量高于长白猪和约克夏猪(P<0.05).梅山猪和宁夏黑猪肌肉的剪切力、羟脯氨酸含量、肌纤维直径和肌纤维间距均低于杜洛克猪、长白猪和约克夏猪(P<0.05),肌束内肌纤维根数(P>0.05)、肌纤维密度和肌大束间距高于上述3个国外品种(P<0.05).
By using the testing methods of muscle histology, chemistry and meat quality according to the muscle tissue structure, intramuscular fat content (IMF), hydroxyproline content, shear force, muscle fiber diameter, muscle fiber numbers, muscle fiber density, distance between muscle fibers and distance between muscle bundles of longissimu dorsi of 5 main swine in Ningxia were measured. The results indicated that IMF of Meishan, Ningxia Black and Duroc were higher than that of Landrace and Yerkshire (P〈0. 05). Shear force, hydroxyproline content, muscle fiber diameter and distance between muscle fibers were lower than those of Duroc, Landrace and Yerkshire (P〈0.05). Muscle fiber numbers (P〉0. 05), muscle fiber density and distance between muscle bundles were higher than those of Duroc, Landrace and Yerk-shire (P〈0.05).
