摘要
利用灰色关联理论对多孔淀粉的比表面和水解率以及亚甲基蓝吸附率和吸油率的关联性进行了对比分析和计算。得到比表面与水解率、吸油率和吸附量的关联度分别为0.827 348、0.610 89和0.518 97。结果表明比表面与水解率的关联度最高,并得到水解率和比表面的关系方程。通过测定水解率可以反映多孔淀粉比表面的变化状况,由此得到一种评价多孔淀粉性能的简易方法。同时,比表面与水解率的高度关联性在一定程度上也说明了在实验条件下酶降解原淀粉颗粒的不同区域在速度上存在明显差异。
Based on the grey relation analysis, the relational grade between the specific surface, and the hydrolysis rate, the rates of adsorption with oil and with relational grade between the specific surface and the hydrolysisi rate, the rates of adsorption with oil and with methylone blue were 0.827 348,0.610 89 and 0.518 97 .The result showed that the relational grade between the specific surface and the hydrolysis rate was the highest and set up an equation of the relationship. The changing of porous starch' s specific surface could be characterized by hydrolysis rate. It is a suitable method to evaluate the performance of porous starch Meanwhile, the high close relationship between the specific surface and the hydrolysis rate indicate that the enzyme degrading in different areas of native starch granule is with different rates.
