摘要
纤维素酶(Cellulase)是指能水解纤维素β-1,4葡萄糖苷键,使纤维素变成纤维二糖和葡萄糖的一组酶的总称,是由葡聚糖内切酶、葡聚糖外切酶、β-葡萄糖苷酶3个主要成分组成的诱导型复合酶系。在酒精发酵时添加纤维素酶可显著提高酒精和白酒的出酒率和原料的利用率、降低料液的粘度、缩短发酵时间;利用纤维素酶以纤维素原料生产燃料酒精可有效缓解能源危机、减轻环境污染和解决资源浪费问题。(孙悟)
Cellulase, the induced recombination enzyme system and any of several enzymes that catalyze the hydrolysis of cellulose (by hydrolyzing β-1,4 glucosidc bond) and further transfer cellulose into cellobiose and glucose, is mainly composed of three components including endoglucanase, ex-doglucanase and β-glucosidase. The addition of cellulase during alcohol fermentation could evidently increase liquor yield and the utilization rate of raw materials, reduce the viscosity of feed liquid, and shorten fermentation time. The utilization of cellulase in alcohol industry could effectively easy up energy crisis, environmental pollution and resources wasting.
