摘要
通过L16(44)正交试验设计确定了热风干燥法生产苹果(非油炸)干制品工艺的最佳护色条件。按照此工艺生产的产品外观为乳白色,小试产品的SO2残留降低至50 mg.kg-1以下,完全符合GB2760中SO2的限量要求。
In the paper, adopting the orthogonal test of L16 (4^4), we got the best browning resisting technics in the production of unfried dry apple by the technology of hot air dryness. The appearance of the product we got was milk-white and the SO2 content of the small trialproduct fell below 50 mg/kg, which absolutely measured up to the limitative demand of SO2 in GB2760.
