Grain Amaranth： A Wonderful Crop with High Nutritional Value

籽粒苋是一类苋属粒用型作物，由红苋（繁穗苋），千穗谷等粒用型苋所组成。其籽实共同特点是富含蛋白质，赖氨酸与钙、铁等矿物质，为当今食品工业与饲料工业重要原料之一，在日本市场上不仅可见到各种苋饼干等食品，而且还出售苋粮、推荐用1份苋籽与9份大米蒸煮米饭，以提高广大人民营养水平。我国近20年来做了大量研究，但开发程度尚远远落后于需求。

Grain amaranth is a kind of Amaranth crops for grain use and composed of A. cruentus （A. paniculatus）,A. hypochondriacus etc.Their seeds are rich in protein, lysine and minerals such as calcium ,iron etc and are one of the important materials in food industry and feed industry at present. In markets of Japan various amaranth biscuits not only can be bought,but also the amaranth foodstuffs are sold .I share of amaranth seed mixed with 9 shares of rice is recommended to boil the cooked rice for raising the nutritional level of numerous people. A large number of researches in field of amaranth have been made, but the development degree is much behind the requirement.
