摘要 从食用菌栽培种类、栽培技术、加工技术、出口贸易等方面阐述了我国食用菌产业的发展现状,并在此基础上提出了持续、健康、稳定发展我国食用菌产业的开发策略:即大力开发种质资源;开发新原料、新配方;建立大型企业,实现标准化,创建特色品牌;加强食用菌保鲜和深加工的开发;建立健全质量标准体系,等。此外,还需加强食用菌遗传学、生理学、生态学、病虫害防治等方面的研究,以期为创造新品种、优质高产提供理论依据。 In this paper, the present situation in edible fungi industry in China was introduced from a number of aspects including cultivation species, planting technology, product processing, trading and so on. The strategies for sustainable, healthy, steady development of edible fungi industry in our country was suggested on consideration of present situation. Following aspects were the idioplasm resources and the new materials and medium development, establishment the major industry, the realization standardization, the foundation characteristic brand, development the edible fungus to maintain freshness and the intensive processing, establishment the perfect quality specification system and so on. In addition, it also should strengthen aspects on edible fungus genetics, physiology, ecology, plant disease controlling research to attain the basic theory of creating the new varieties and high yield and quality.
