摘要
研究了一株产黄色素的红曲霉菌株MonascusHB-5的生物学特性。气生菌丝发达,呈中间黄色、边缘白色的圆形隆起。该菌无性繁殖产生分生孢子,大小为(4~10)×(5~12)μm;有性繁殖形成球形子囊果,大小为(15~19)×(20~24)μm。该菌生长的最适pH为4.0~5.0,最适温度为30~32℃,适合的碳源为玉米粉,氮源为硝酸铵。该菌的发酵产物-黄色素的色调为棕黄色,仅在370nm处存在最大吸收峰,并对色素的稳定性及安全性进行了初步研究。
The biological characteristics of Monascus HB-5 which produced yellow pigment were studied. Aerial hypha grew rapidly and strongly, formed a nummular apophysis with yellow in the center and white on the brim. The conidia were produced in the agamogenesis process, and the size was (4-10)×(5-12)μm. Globose ascocarps were produced in the sexual reproduction process, and the size was (15-19)×(20-24)μm. It is shown that the optimal growth temperature of Monascus HB-5 is 30-32℃, pH is 4.0-5.0. The optimal carbon source is corn and the nitrogen source is NH,NO3. Its color tone is yellow, and the single absorption peak is on 370nm, and the stability and security of pigment are also studied.
