2-甲氧基丁基烷基硫醚类化合物的合成与香气研究

摘要 在四氢呋喃溶剂中,在氢化钠的作用下,1-烷硫基-2-丁醇类化合物与碘甲烷回流反应3~4h,得到6种2-甲氧基丁基烷硫醚类化合物,分别是2-甲氧基丁基乙硫醚、2-甲氧基丁基丙硫醚、2-甲氧基丁基丁硫醚、2-甲氧基丁基己硫醚、2-甲氧基丁基辛硫醚、2-甲氧基丁基糠硫醚。经IR、GC-MS、1HNMR分析确证了以上所合成化合物的结构。2-甲氧基丁基烷硫醚类化合物一般具有甜味、蔬菜、葱蒜和萝卜香气。 Six alkyl 2-methoxybutyl sulfides were obtained by refluxing 1-alkylthio-2-butanols with iodomethane for 3-4 hours under the action of sodium hydride in tetrahydrofuran. The alkyl groups included ethyl, n-propyl, n-butyl, n-hexyl, n-octyl and furfuryl. All products synthesized above were identified by IR, MS and IHNMR. Alkyl 2-methoxybutyl sulfides possess a sweet, vegetable, onion, garlic and radish aroma.
