摘要
本文旨在使玉米蛋白增值,为工业化生产玉米醒酒肽提供依据。采用气相色谱、氨基酸自动分析仪等仪器,研究了玉米蛋白水解物——粗肽的醒酒活性。结果表明:中性蛋白酶的低水解度粗肽(2h、酶底比0.5%、料液比1:25)能使小鼠血醇浓度降低54.06%,但该粗肽的蛋白回收率太低。碱性蛋白酶的中水解度粗肽(4h、酶底比0.5%、料液比1:20)的醒酒活性高,并存在剂量效应关系,其剂量为800 mg/kg.bw时,小鼠血醇浓度降低了62.80%,且该粗肽的蛋白回收率高,具有开发价值。
In order to enhance the value of corn gluten meal and provide scientific basis for production anti - alcoholism corn crude peptides, the anti - alcoholism bioactivity of corn crude peptides was studied by means of gas chromatography and automatic amino acid analyzer. The results show that the crude peptides with lower degree of hydrolysis (DH) (2h, [E]/[ S] = 0.5%, ratio of material and extract solvent = 1 : 25 ) hydrolyzed by Neutrase can decrease the blood ethanol concentration of rats by 54.06%, lut the rate of albumen recovery is was too low. The crude peptides with middle DH (4h, [E]/[ S] =0.5%, ratio of material and extract solvent = 1: 20) hydrolyzed by Alcalase performs well and can decrease the blood ethanol concentration in a dose - dependent manner. When 800 mg/kg · bw of the crude peptide is administered, the blood ethanol concentration of rats is decreased by 62.80% and the rate of albumen recovery is high. The corn crude peptide hydrolyzed by Alcalase is promising for industrial production as an anti -alcoholism food.
