摘要
我国是一个世界杂粮生产大国,且有着悠久的杂粮饮食文化。近年来,随着人们对健康的日益关注,国际国内市场对“多样化、营养、健康、安全、方便”的杂粮健康食品的需求日益增强,而目前我国杂粮绝大多数是以原粮和初级加工品的形式消费和出口,增值比例极低,因此,加强杂粮的基础与深度开发研究已迫在眉睫。本文主要就杂粮的深加工技术研究开发现状与趋势作一概述,并提出几点个人思考。
China is one of the biggest country of coarse grain production in the world. With the increasing of people' s attention to health, there is increasing demand for diversified, nutritional, healthful, safe and convenient food made from coarse grain. At present, the consumption and export of coarse grain are mainly in the form of raw material and primary processed products had little value added in China. Therefore we must attach importance to the basic research and development of coarse grain. The status and trends in research and development of utilization of coarse grain will be discussed in this paper. Several perspective will also be proposed.
