摘要
红曲是亚洲知名的传统发酵食品,已在全世界用作天然色素和膳食增补剂。阐述了红曲的主要生理活性物质、功能,对其产物真菌毒素桔霉素做了简单介绍;并对近几年国内外红曲霉菌种选育和发酵条件优化等方面的研究进展进行了概述。
Red fermented rice (RFR), known as Asian traditional fermentation foodstuff, is now used as natural colorants and a dietary supplement all over the world. Physiological active components and their functions in Hongqu, such as Monascns pigment, cholesterol-lowering ability, antimicrobial function, enzymes, osteoporosis therapy, mycotoxins-citrinin et al. were summarized in this paper; the study process in recent years on Monascus' mutagentic breeding and optimizing culture conditions were summarized.
