摘要 采用高效液相色谱法(HPLC)分析异构化α-酸,给出同一色谱条件下异α-酸、二氢、四氢和六氢异α-酸的HPLC谱图和各组分的紫外光谱。用该方法分析未知啤酒样品,将其与标准品进行对照,从而鉴别出样品中异构化α-酸的种类。 A high performance liquid chromatograph (HPLC) method to identify isomerized-α- acids in beer was described. The chromatograms and UV spectrograms of iso-α- acid, rho- iso-α- acid, tetrahydro- iso-α- acid and hexahydro- iso-α- acid were presented respectively in the same condition. It can be used to identify the forms of isomerized -α- acids in unknown beer samples.
