摘要
从不同角度对谷物蛋白质进行分类,并阐述其特性;分别论述玉米四种蛋白组分的国内外研究进展,以期全面反映玉米蛋白组分领域的研究概况。
Protein components in maize are classified into four types from different point of view and the attribution of protein components in maize is expounded in the present paper. In order to reflect the whole study situation in the area of protein components in maize, it was reviewed about current research situation and new progress.
