摘要 目的了解广州市市区食品污染现状[1]。方法选择市内有代表性的5个区,共监测25个单位。随机采集了16类180种食品进行了有机磷农药、重金属、食品添加剂、食源性致病菌等30个项目的检测[2]。结果合格食品159个,合格率88.3%,其中1个饮料、3个凉果甜蜜素超标1.2~2.4倍,1个碳酸饮料安赛蜜超标1.5倍,1个面粉铅超标3.4倍,1个水产品镉超标1.4倍,1个肉制品检出人工合成色素,生肉检出7株沙门氏菌检出,1株单增李斯特氏菌,水产品检出5株副溶血性弧菌,均未检出致病性大肠杆菌,食源性致病菌阳性率为17.1%。结论生肉、水产品食源性致病菌污染较普遍;粮食、水产品重金属污染;添加剂超量和超范围使用,色素和甜味剂尤为突出,今后应重点加强监督管理。 Objective To investigate the food contamination status of Guangzhou City. Methods With simple random sampling method, 180 representative food samples of 16 categories were collected from 25 places in Guangzhou and a total of 30 parameters were assessed, including phosphate pesticides, heave metals, illegal food additives, food - borne pathogenic germs, etc. Results One hundred and fifty- nine samples (88.3%) fulfilled the government standard. But sodium cyclamate in 1 beverage and 3 succades (exceeded the standard 1.2- 1.4 times), Acesulfame ( 1.5 times) in 1 carbon- ic acid beverage, Pb (3.4 times) in 1 flour and Cd (1.4 times) in 1 aquatic product were exceeded the standard. Synthesized colorant was found in 1 meat product, 7 strains of Salmonella and 1 strain of Listeria monolytogenes were found in raw meat, 5 strains of Vibro parahemolyticus were found in aquatic products. EHEC was not detected. The positive rate of foodborne pathogenic germs was 17.1%. Conclusions The contamination of food - borne pathogenic g^rms is widespread in raw meat and aquatic products, and heavy metals in grains and aquatic products. The use of food additives exceeds the recommended quantity and range of national standards, especially colorant and sweetener. Therefore, supervision should be strengthened.
