摘要
研究了一种由甘草提取物、陈皮提取物、卵磷脂、抗坏血酸和柠檬酸组成的复合天然抗氧化剂。通过响应面分析法得到了的具有最佳抗氧化性的复合天然抗氧化剂,其各成分比例为30∶60∶20∶1∶2。在添加量相同的情况下,复合天然抗氧化剂的抗氧化性高于BHT和茶多酚,但比TBHQ低。
A complex natural antioxidant (CNA) comprised of liquorice ( Glycyrrhizauralensis Fisch) extract ( GE), orange peel ( Pericarpium Citri Reticulatae ) extract ( PE ), phosphatidyl choline ( PC ), ascorbic acid (Vc) and citric acid (CA) was prepared. The optimum ratio of GE, PE, PC, Vc and CA was 30:60:20: 1:2, and it was obtained by response surface methodology. With the same addition, the antioxidant activity of the CNA was higher than that of BHT and catechin, but lower than that of TBHQ.
