摘要
微胶囊技术是食品工业中的一门新兴技术。淀粉基原料作为微胶囊壁材之一,不仅资源丰富,来源广泛,而且还赋予产品优质的质量性能。微孔淀粉是近年来发展起来的一种新型变性淀粉,具有良好的吸附性。本文综述了微孔淀粉的定义、结构、制备与改性方法、特性及其在微胶囊壁材应用方面的研究进展。
Microencapsulation is a newly developing technique within the food industry. As one of wall materials of microcapsules, starch is not only a kind of abundant and widespread resources but also can make the product quality excellent. Microporous starch is a kind of newly developing modified starch in recent years, which has an excellent adsorptive ability. Thus the definition, structure, preparation and modification, properties and its application as wall material in microencapsules of microporous starch were reviewed in this paper.
