提高“伯利哀法”检测花生油质量准确性探索

摘要 对"伯利哀法"中皂化温度、时间、沉淀条件进行了试验,试验表明,皂化温度需控制在85~90℃,皂化时间应控制在10min,在沉淀过程中必须连续不断地搅拌,以避免局部过浓现象。在上述条件下检测花生油的质量重复性好,结果准确。 According to the state standard, the test for the quality of peanut oil is done with the Ber Li Ear method. But during the test, the saponification temperature and time, the condition of precipitation,as well as some other principal measures are inaccurately determined, and the author has made an experiment on the saponification temperature and time, as well as the condition of precipitation.The experiment shows that the tempemture and time of saponmcation should be controlled under 85-90℃ and within 10minutes. In precipitation, the oil should be continally agitated, in onler to avoid the phenomenon that some oil is too dense in some local parts. By doing so, the test result repetition is good and the result is accurate.
