摘要 目的了解北京市东城区市售食品食源性致病菌及化学性污染物的污染状况。方法以随机购买的方式获得食品样品,其中4类食品进行单增李斯特菌等6种食源性致病菌监测;10类食品分别进行金属污染物、农药残留、食品添加剂等化学性污染物监测。结果156份食品中检出目标菌39株,总检出率为25!0%,其中单增李斯特菌检出率最高,为23!7%;137份食品中铅含量超标13份,129份食品中镉含量超标10份,砷的含量范围在5.0 ̄540.4μg/kg之间,38份茶叶有机氯残留超标8份,总超标率为21!0%;50份面粉样过氧化苯甲酰含量超标7份,超标率为14!0%;29份果冻检出含有苯甲酸的样品18份,含糖精钠的样品14份,山梨酸及5种着色剂未超标。结论生畜禽肉及散装熟肉的单增李斯特菌污染,猪肾、禽畜肉、皮蛋和淡水鱼的金属污染,茶叶的农药残留以及面粉、果冻中食品添加剂的不合理使用是目前存在的主要问题,也是今后监测和市场监管的重点。 OBJECTIVE To understand the pathogens and the chemical contaminations in the foodsold in Beijing Dongcheng District. METHODS Samples were randomly brought from the market, 4 types of foods were monitored for L. Monocytogenes and other 6 kinds of pathogens. 10 types of foods were monitored for metal contamination, pesticide remains, food additives. RESULTS 25% of the sampie which from 156 food samples were found 39 tested pathogens, and L. Monocytogenes is the highest, 23.7%.13 of 137 food sampies were found high lead content, 10 of 129 food samples were found high cadmium content: arsenic content range is 5.0-540.4 μg/ kg; 8 of 38 tea organic chlorine remains were over the standard, total rate is 21.0%.7 of 50 flour powdersamples have over content of benzoyl peroxide, which is 14.0%.18 of 29 jelly samples were found containing benzyl acid; and 14 of them containing saccharin sodium: sorbic acid and other 5 kinds of colorants are within the standards. CONCLUSIONS The main problems and also the keep watchingpoint of the market for further is : the L. Monocytogenes contamination of the raw domesticanimal meat and bulk cooked meat; metal contamination of pig kidney, domestic animal meat, preserved eggs and fresh water fish: pesticide remains of tea and nonstandard usage of food addict in flour powder and jelly.
