摘要
膨化技术作为一种新型食品生产技术,正逐步在食品工业中特别是在休闲膨化小食品的生产中得到广泛的应用。本文分析了膨化的机理和膨化的必要条件,在实践的基础上提出水产品与农产品相结合进行膨化,从而改变目前膨化产品的原料单一性,使其膨化产品由营养型向保健型发展。这类膨化食品有利于人体健康。
As a new kind of food-processing method, expanding technology are widely used in food-processing industry, especially in rest food production.Tbe mechanism and necessary condition of expanding are analysed, an expanding method of combining farm produce with fishery products is put forward by experiment in this paper. The expanding method proposed in this paper changes material singleness of expanding food at present and the rest food become more health careful other than nutritious. This kind of expanding food is of great benefit to human beallth.
