摘要 用喷雾干燥法进行猪油脂粉末化,对其关键技术乳化液的制备进行了深入探讨。选择了合适的复合乳化剂;确定了乳化剂添加量、乳化温度、乳化时间和乳化液中水的添加量等工作参数。 Powdered lard was made By using spray drying method. The key technology, the manufacturing of emulsified mixture was studied in detail .The suitable emulsifier for producing powdered lard is decieded . The technolongy parameters about emulsifier additive quantity, temperature, time length of emulsfication and addivive water were decided. Applying scanning electron micrographs and amtioxygenix text, the product quality was analyised.
