摘要
研究了HACCP在搅拌型酸奶中的应用,描述了搅拌型酸奶的工艺流程,并进行危害分析,确定了酸奶生产的关键控制点,制定相应预防措施、控制方法、纠正措施,提出了标准操作规程。
This paper study on the application of the HACCP , describe the production of mix-sour milk ,analyze the hazard possibly existing in the process, determine critical control points, formulate a pattern of preventive measures ,control methods and corrective action and introduce standard management of production quality.
