合理强化眉豆型营养保健米膳TE模式NSF研究

摘要 测定了眉豆型营养保健米的Zn、Cu、Fe、Mn、Se含量,作了营养评分(NSF),对该型保健米的科学配膳进行了研究。 The contents of Zn、Cu、Fe、Mn and Se in NHR of brow beaus were determined.Thecontents of Zn、Fe、Cu、 Fe、Mn and Se are 14.25,0.36,12.05, 1.14 and 0.024(mg/100g),respectively.The values of NSF(VNSF)of Zn、Cu、 Fe、 Mn and Se in the samples of NHR,rice,soya,lean meat,whole milk,egg,grass carp and Chinese cabbage were calculated andcompared.Thais VNSF are 13694 286.998,.743,38,4216,35,347,respectively.TheVNSF of the NHR are markedly higher than those of the rice.The scientific c'ombinationfin meals of NHR of brow beaus with other foods was tesearched,too.It can be used for improvement of nutritional status of people in the country.The popularization of intake of NHR of brow beaus is suggested.
