摘要
采用抗坏血酸、异抗坏血酸钠作还原剂湿法生产魔芋精粉,研究了还原剂种类和浓度对魔芋精粉产品色泽的影响,3000mg.L-1的抗坏血酸或5000mg.L-1的异抗坏血酸钠可以代替亚硫酸氢钠、硫代硫酸钠作还原剂用于生产无硫魔芋精粉。
Vitamir C and sodium erythorbate could be utilized as reducer in the production of KGM. Effect of different reducers and their dosages on color of KGM were studied. The study showed 3000 mg.L^-1 vitamin C or 5000 mg . L^-1 sodium erythorbate could replace natrium bisulfurosum and natrium thiosulfuricum as reducer in the production of KGM without sulphur.
