摘要
根据超高压食品加工机理所做的研究提出了超高压食品加工的特点及要求通过对现有各种超高压容器结构的比较,给出了适合于超高压食品加工的超高压筒体结构。
The paper presents the features and requirements of ultra-high pressure food processing on the basis of some researches into its mechanism.By comparing the structures of different types of available ultra-high pressure vessels,cylindrical structures suitable for this processing are illustrated and the strength of combinatory cylinder pressed between cylinder walls is analysed.In the end,some methods for improving the proficiency of the food processing are also given.
