菠菜颗粒食品的研制

摘要 以新鲜菠菜为原料,研究了菠菜颗粒小吃食品的加工工艺。结果表明,将洗净的菠菜放入浓度为400mg/kg的Zn2+溶液中,在100℃下烫漂2min,打浆后添加0.2%的黄原胶、0.2%的海藻酸钠和其他辅料,在50 ̄60℃下干燥到产品含水量低于10%,可获得品质理想的产品。 This article made a research on the process of grain food of spinach leaf. The resuhs showed that following process could obtain the products with the best quality. Firstly dipped the cleaned spinach leaf in 400 mg/kg Zn^2+ solution, at 100℃. Secondly took them out after 2.0 min and beating it. The spinach leaf. brei was mixed 0.2% xanthan gum, 0.2% sodiumalginate and others addit materials. Finnally dried them in 50-60℃ until the moisture content was below 10%.
