摘要
通过对湿热处理淀粉粘度的测定,揭示了湿热处理对橡实淀粉改性的影响规律,结果表明:湿热处理的时间、温度和含水率等因素对橡实淀粉的改性的程度达到极显著水平,各因素影响程度的大小依次为:时间、温度、含水率,湿热处理淀粉的改性程度大小随处理时间、温度和含水率增加而加强。
This experiment makes sure the influence of moist - heat treatment on starch modification by measuring the viscosity properties after moist - heat treatment. The results show: time, temperature, water content or moisture and so on have very significant influences on the starch modification of acorn. Their influencing intensity are: time 〉 temperature 〉 water content or moisture. In addition the magnitude of the starch modification caused by moist - heat treatment intensifies with the increase of time, temperature, and water content or moisture.
