小麦粉激光粒度测试探析 被引量:13

摘要 采用激光粒度仪测试小麦粉粒度,探讨不同小麦粉的粒度分布规律.测试结果表明:激光粒度测试曲线能够较精确地反映出不同小麦粉的粒度分布特征.不同硬度小麦采用不同研磨强度磨制的小麦粉粒度差异较大,尤其是细小粉粒的分布很不均衡.小麦粉样品的等效粒径微分分布曲线均在10~40μm区间出现一个峰,其峰值高度随着研磨小麦硬度的增大而减小. Wheat flour particle size was analysed by lazer particle analyzer in order to get the distribution of particle size. The results showed that the curve of lazer particle analyzer can indicate particle size distribution characteristics of different wheat flour. When wheat with different hardness ground by different intension of grinding, wheat flour particle size had considerable different, especially the fine and small particles had great unequilibrium in distribution. There was a peak during the area of 10 - 40 μm in the curve. The height of each peak decreased with increasing of wheat hardness.
